How to Make Your Own Kombucha

When it comes to homebrew, most people will tell you to avoid it. Creating your own drinks at home is often a no-no, as the process is typically far more expensive and confusing than you might first assume. Kombucha is a popular beverage to make at home, though, as this low-sugar, probiotic-rich drink continues to gain traction. Given it is absolutely loaded with features like vitamin B and healthy organic acids, it is a go-to choice for people looking for a healthier alternative to sodas and soft drinks.

Making your own can be tough, though, if you do not know how to go about making this particular form of tea. The best way to get started is to buy some quality tea leaves, such as oolong or black tea. Then, you need to boil around three quarts of water in a kettle and filter the water afterward. Add in your tea bags/leaves and let them brew to the level of strength you are happy with.

Allow this to cool down to room temperature, adding around ½ cup of honey (or sugar, if you prefer) to the tea. You then need to add in what is known as a Symbiotic Culture of Bacteria and Yeast, or SCOBY. It is then added to your tea, and add in a paper towel to the top of the bowl/jar where the tea is being held.

The kombucha has to be stored in a place that is free from direct sunlight; you want something in the region of 750F to 800F. This has to ferment for a period of seven to ten days now, so you should not interrupt the process or get in the way. The kombucha might look a bit murky as the process goes on, but this is completely normal as all of the nutrients are released and then absorbed by the drink.

Once the fermentation process is finished after the seven to the ten-day waiting period, you should put your kombucha into jars. Leave around a half-inch at the top of each bottle so that the juice can settle, and the carbon dioxide can release. It should be stored at room temperature if you can help it. If you feel it is a bit tasteless, add in something like some herbs, spices, or fruits for a bit of extra punch and flavor. Let these infuse for an hour or two, and enjoy!
